These vegan crispy "chicken" burgers will be the star of the show, especially when topped with chipotle tomato sauce...

Ingredients

Burger

1 tablespoon Olive oil
80ml Vegetable broth
2 tablespoons Soy sauce
65g Vital wheat gluten
45g Panko bread crumbs
1/2 teaspoon Salt
A pinch of Black pepper
128g Bread crumbs

Chipotle Sauce

1 tablespoon Olive oil
1 Onion chopped
1 Garlic clove crushed
1/2 teaspoon Ground cinnamon
1 teaspoon Ground cumin
3 tablespoons Maple syrup
2 teaspoons White wine vinegar
350g Tomato passata
Salt to taste
Pepper to taste

Instructions

Burger

Preheat the oven to 200C, tip the chickpeas into a mixing bowl and smash with the back of a fork or a potato masher. Add the olive oil, broth, soy sauce, vital wheat gluten, breadcrumbs and seasonings and mix.

Knead the mixture for 2 minutes until firm, divide the chickpea mixture into equal sized balls then press down to make burger patties.

Press the burgers down into left over bread crumbs on both sides so the burgers are coated in bread crumbs. Place each burger onto a baking tray and bake for 30 minutes flipping the burgers after 15 minutes. The burgers should be firm, crispy and brown.

Chipotle Sauce

Sauté the onion and garlic in the oil until soft, add the chipotle powder, cinnamon and cumin and cook.

Add the syrup, vinegar, passata and salt and pepper, cook for a few minutes then whizz the mixture in a blender until smooth.

Spoon the chipotle sauce on top of the patties followed by cheese (we used vegan mozzarella). Return to the oven to melt the cheese and serve in burger buns!
