Ingredients

2 Eggs
1 Avocado
2 slices of Bread
2 handfuls of Mixed greens
Salt to taste
Pepper to taste

Instructions

Heat a pan of water, gently break an egg into the water and poach for 1 to 2 minutes until firm.

Carefully slice the avocado in half, remove the stone and scoop out the flesh. Pop into a bowl and mash with a fork. Spread on to toasted bread, pop the eggs on top and season with salt and pepper. Add mixed greens and serve!
