Preheat the oven to 150C, beat the egg whites until foamy, add the salt, cream of tartar, sugar and vanilla. Whip until stiff peaks form.
Sift the almond flour and icing sugar into the mixture and fold into the egg mixture. Pop the mixture into a piping bag and pipe out one inch rounds on to a baking tray lined with baking paper. Tap the pan hard 3 times to release the air bubbles then leave to sit for 20 to 30 minutes.
While the macarons bake for 20 minutes, whisk the softened butter until pale, add the icing sugar one spoon at a time while whisking then add the vanilla and whip until light, creamy and fluffy. Once the macarons have cooled, sandwich them together using the buttercream.
Now for the fun part! Using a mixture of water and icing sugar, drizzle icing lines over the macarons and add googly eyes!
